Named after the Roman goddess Juno. Juno was the Roman goddess for love and marriage, and that is why so many weddings tradionally take place in June, you heathen infidel! June is the sixth month of the year in the Gregorian calendar. Julius Caesar named this month in 46 B.C. Father's Day is celebrated in the United States on the third Sunday in June.

FATHERS' DAY HISTORY

Sonora Dodd, of Washington, first had the idea of a "father's day." She thought of the idea for Father's Day while listening to a Mother's Day sermon in 1909.

Sonora wanted a special day to honor her father, William Smart. Smart, who was a Civil War veteran, was widowed when his wife died while giving birth to their sixth child. Mr. Smart was left to raise the newborn and his other five children by himself on a rural farm in eastern Washington state.

After Sonora became an adult she realized the selflessness her father had shown in raising his children as a single parent. It was her father that made all the parental sacrifices and was, in the eyes of his daughter, a courageous, selfless, and loving man. Sonora's father was born in June, so she chose to hold the first Father's Day celebration in Spokane, Washington on the 19th of June, 1910.

President Calvin Coolidge, in 1924, supported the idea of a national Father's Day. Then in 1966 President Lyndon Johnson signed a presidential proclamation declaring the 3rd Sunday of June as Father's Day. President Richard Nixon signed the law which finally made it permanent in 1972.

Pineapple Layer Cake

I used my silicone layer baking pans for this cake. It was so moist and delicious! You will love it!

1 (18.25 ounce) package yellow cake mix
1 (11 ounce) can mandarin oranges, drained
1 (20 ounce) can unsweetened crushed pineapple, drained
1 (3.4 ounce) package instant vanilla pudding mix
1 (12 ounce) container frozen whipped topping, thawed

Prepare cake batter according to package directions. Beat in oranges until blended. Pour into two greased and floured 9-in. round baking pans. (I used silicone layer cake pans so no greasing!)

Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Combine pineapple and dry pudding mix; fold in whipped topping. Spread between layers and over top and sides of cake. Store in the refrigerator.




Spinach Salad with Bacon Dressing

Bacon Dressing

Eight Slices of Bacon
1/2 red onion
Cider Vinegar (about 2/3 C)
1/2 tsp sugar (I use more for taste) You can use regular sugar if you wish.
1/4 tsp pepper
Dash of salt

Take bacon, fry set aside. In a bowl mix the cider vinegar, salt, pepper, sugar. Put mixture back in the fry pan. Crush the bacon, and then add it. Heat the mixture and pour over your Spinach salad.

Spinach Salad

Package of tiny spinach
four eggs
red onion
radishes
mushrooms

Hard boil eggs, cool and then with egg slicer, slice eggs add to the spinach. Slice the radishes, red onion and mushrooms and add to salad. For the side........some nice hot rolls, butter




Trail Mix

1 box Goldfish® crackers (your favorite flavor)
1 box of Teddy Grahams® (your favorite flavor)
1 can mixed nuts
1 big bag M&M® candies
1 box raisins or Ocean Spray® Craisins® Sweetened Dried Cranberries (your favorite flavor)

Instructions

Mix all ingredients in a large bowl with a big spoon. When mixed, use spoon to fill snack size baggies with trail mix. It usually makes about 12-15 bags. Keep in a cool dry place. They are easy to grab for that hike or bike ride, or a ride in the car or RV!




Fat Free Cast Iron Cooking

Admit it. The phrases "fat free" and "cast iron cooking" aren't two you normally put together. When most people think of cast iron cooking they think of heavy meals drowning in artery-clogging fat. In other words, just like grandma used to make. But cast iron doesn't deserve its unhealthy reputation. Experienced cooks know that if you really want great tasting, healthy meals, you need cast iron.

That Amazing Non-Stick Surface

When most people think of non-stick cooking they think of Teflon. But Teflon breaks down eventually. And you can't brown food properly on it. Burn, yes. Brown, no. Many cooks put up with this limitation because they think this is the only way they can cook fat free. But there is a better solution. You can build a non-stick surface on cast iron. And unlike Teflon, that surface only gets better over time. How?

When you first buy that cast iron skillet or pan you need to season it. Basically, you bake oil into the microscopic pores of the cast iron. This is the start of your non-stick patina. And it's a win-win situation for every health conscious cook. The oil is baked into the pan so you don't have to add much to the food. And from the point that you first season it, your pan will absorb the oils from each meal that you cook.

This builds on that non-stick patina, making it better after every use. You don't have to use a lot of oil on a new pan. A seasoned pan uses much less-and sometimes none at all. I have used a little water or vegetable broth on my 9 year old griddle to very good effect.

The Keys to Fat Free Cooking Success

Cast iron, like everything, can be used or abused. When used correctly, you will find that your food slides right off the cookware. Here is how you achieve that result:

Preheat your cookware. Don't put food on cold cast iron cookware. Spread a little oil (or a short spray) on that cast iron skillet or griddle. Then let it warm up on medium or low heat for a minute or two before putting any food on.

Use Low Heat Once your cast iron is warm it will hold onto that heat. This means that if you used too much heat, your pan will stay too hot for a long time. For best results, don't turn your heat too high. This will prevent burning, which is the common reason food sticks to cast iron.

Cook it Slowly A lower heat means a slower cooking time-and twice the flavor. You're giving the flavors in the food time to develop. If you're using a cast iron griddle and want those grill marks on your food, don't be in a hurry to turn it over. You need to let the food sit still long enough to develop them.

Question: How do I clean a rusted iron skillet?

Answer: I have my mother's and grandmother's cast-iron skillets and love them--nothing's better for cooking corn bread. To restore yours, use a nonmetallic scrubber to remove the rust, wash with a mild dish soap, rinse well, and dry with a clean towel. Then re-season the surface by coating it (inside and out) with unsalted vegetable shortening. Put the greased skillet upside down on a foil-covered baking sheet and bake at 350 degrees for 1 hour. Let cool, and remove excess grease with a paper towel. To prevent rust, never soak cast iron in water, put it in the dishwasher, or scrub with metal scouring pads or harsh cleansers. Put a paper plate, paper towel, or round coffee filter between stored pans to absorb moisture.

• The worlds strongest beer is 'Samuel Adams' Triple Bock, which has reached 17% alcohol by volume. To obtain this level, however, they had to use a champagne yeast.

• Modern breathalyzers work on a clever electrochemical principle. The subject's breath is passed over a platinum electrode, which causes the alcohol to bind with oxygen, forming acetic acid. In the process it loses two electrons, a process that sets up a current in a wire connected to the electrode. The higher the concentration of alcohol in the breath, the greater the electrical current, which can be read by a simple meter to indicate intoxication levels.

• Attila the Hun was suspected of suffocating from a bloody nose after passing out from alcohol at his 'bachelor party'.

• Reno, Nevada has the highest rate of alcoholism in the U.S., Provo, Utah, the lowest. Now there's a big surprise all round!

• The saying 'Mind your P's and Q's' comes from the time when alcoholic beverages were served/sold in Pints and Quarts. Thus, to mind your P's and Q's meant to be careful how much you drank.

• It is always helpful to have a law that clearly defines when a person is legally intoxicated. In Kentucky, anyone who has been drinking is considered sober until he or she cannot hold onto the ground.

• The term 'toddlers' originated in England. There were impurities in the drinking water that disallowed the water to be used for drinking. A common alternative drink was beer (it was cheep, plentiful and the water used to make it was treated during the initial boiling during brewing). Toddlers, just weaning off of mothers milk were unaccustomed to the effects of beer. This coupled with the fact that they were just learning how to walk really made them toddle.

• In the mid 70's, Australians were the 3rd biggest beer drinker in the world. (behind Germany and Belgium). In the late 90's, they don't even get into the top ten!
